This afternoon the kids and I made one of our favourite Ramadaan foods, Date Fridge Cake. This is a huge hit at Iftaar time, but its also a wonderful gift for friends and family. We’re going to pack some into little boxes for Little Man to take to school tomorrow for his teachers, as well give some to our neighbours.
Its a really simple recipe, and there’s no baking needed. I even got the kids involved. The expression on their faces when they accomplish something is priceless.
Here’s the recipe:
1 packet Marie Biscuits
250 g Dates (seedless)
115 g Butter
1/2 cup Sugar
5ml Vanilla Essence
Pinch of Salt
Optional: Flaked almonds, choc-chips
Melt butter and sugar in heavy based pot. Add in chopped dates. Allow to boil on medium heat until it resembles a jam-like consistency. In separate bowl beat egg, add in vanilla essence, and pinch of salt. Break biscuits into bitesize pieces (this is what the kids do 🙂 ) Add egg mixture and broken biscuits into date mixture, stirring well. Add in optional extras, stir. Press into a greased tin and allow to set in fridge. Cut into squares, read bismillah and enjoy!
