So what do you when you’re a mum pressed for time, and the kids dont have much of an appetite because of this heat…why… you fake sushi of course! 😂
I have mentioned how this is now one of my favourite foods. I love the fresh clean flavours, but never imagined that I’d ever be able to make it myself. Of course between YouTube and Google, every recipe imaginable can be easily found, and tweaked to your preference.
Oh, you’re probably wondering why I say it’s faking sushi, well…because firstly, I didn’t have fresh salmon, so used a canned variety, and secondly because I have no clue where to buy seaweed from! Still the end result was pretty amazing
Here’s what I did
Firstly cook 2 cups of white rice, remove this from pot. Add in 100 ml vinegar and 2 tbsp sugar, cook on medium heat, when it reaches boiling point, remove from heat, add in the previously cooked rice. That’s what makes it sticky, and allows it to hold its shape.
You’re also going to need the following:
Half a cucumber, peeled and sliced into long strips. Salmon chunks (of course! :p ). Then I made a spicy perinaise sauce, instead of wasabi ( Just combine equal amounts of mayonnaise with your favourite chillie sauce) . And soy and sesame seed sauce.
Right, now that youve gotten everything ready. Its time to put it together.
Step 1: Place a sheet of waxwrap over the grass rolling mat. It prevents the rice from sticking to the mat. Layer and flatten the rice over half of it.
Step 2: Spread a generous layer of the perinaise sauce, then chunks of salmon, and top with strips of cucumber
Step 3: Roll up tightly (I highly recommend watching a few YouTube videos if it’s your first time) and then using a very sharp knife, cut into even sized pieces.
Step 4: It almost looks like real sushi at this stage. Just drizzle your soy and sesame sauce over, top with extra chunks of salmon and voila! SUSHI!!!
